On Saturday night, we went to dinner at one of our favorite restaurants, Carrabba's, and did some shopping at Whole Foods and Bass Pro Shop. I had my favorite- Pasta Carrabba and Blackberry Sangria. I have yet to replicate either recipe, but am looking forward to some attempts! I've been making tons of soup/chili the past few weeks so I got some lentils in bulk and have plenty to last us for spicy Italian Sausage & lentil soup.

Sunday morning we woke up late and M fixed us breakfast - uncured, all-natural bacon and organic, unbleached corn grits. He's a great breakfast chef! After breakfast, we went into town, ran some errands, and ended up taking a long drive out in the country looking for houses for sale. We found some pretty areas and enjoyed the pretty colors on the trees. Afterward, M came home and did some work on his truck. We ended up having a pretty productive evening, as we were able to clean out and organize the shed and I was able to switch our summer clothes for our winter clothes and make the annual "giveaway" pile. Here in Dickson we've found the Help Center and have chosen to donate our things to them. I enjoyed the beautiful mums on our front porch and was able to use my new lens to grab some pretty shots. 

I'm looking forward to this week. We're planning on hitting the gym and finding a place to go camping this coming weekend. I want a big fire, pretty scenery, and s'mores. What are you looking forward to?

I love this recipe for cornbread. It's so simple, easy to make, and absolutely delicious.It goes well with just about any soup or dinner and reheats well, too.

1 C Flour
1 C Cornmeal
1/3 C White Sugar
1/3 C Brown Sugar
1 tsp Salt
3.5 tsp Baking Powder
1 Egg
1 C Milk
1/3 C Vegetable Oil

Mix. Bake at 375 for 20~25 minutes. Enjoy.



random musings

I just cannot seem to jump back on the blogging train. I blame it on not having a camera- what's a post without pictures? Well, I just recently got my new lens! It's a 35mm f/1.8 for Nikon and I couldn't be more thrilled with it. 

I was able to sell another lens I had that I never used on Craigslist and it practically paid for my new lens. I haven't really used the new lens yet because my camera body is dusty. I'm waiting for the cleaning kit to arrive before I try to leave the lens attached for a long period of time. The few pictures I did take with my new lens just blew me away. It really is all about the lens! 

In other news, work is still going well. I've really tried to go above and beyond what is required of me and it has paid off. I have met all of my goals for the month and am able to take these last couple of days to relax and plan out the upcoming month. I enjoy my co-workers and although the job can get pretty stressful, it can be very rewarding as well. 

The past two weekends M and I have been out of town and have had a great time with friends. It has been nice to get out of our semi-little, boring town, but I'll be honest- I'm looking forward to this weekend! We get to sleep in, watch the football game, catch a movie, and hopefully head to church on Sunday. 

My brother-in-law has spent the last four years of his life as a Marine based at Camp Lejune in Jacksonville, TN. I'm very thankful for his heart to serve our country. Most of us will never ever know what he has gone through in two deployments. This past Wednesday was the last day of his 4 year contract. He and my sister packed up their things and drove back to VA to live yesterday. They have some HUGE changes coming up -finding jobs, a place to live, etc. Please pray for them that God would lead them to where they're supposed to be. 



Once I get my camera cleaned and ready to go, I promise I will have some more consistent posting- so check back next week!

What I'm Lovin' Wednesday

I'm loving this cool weather! The leaves are already starting to turn and fall. The crisp mornings feel wonderful and inspire me to cook warm comfort food.

 We've had chili and cornbread twice and tonight we are trying our own version of Spicy Sausage Lentil Soup. We shaped our recipe around the original found here. 

Recently, I've really enjoyed trying new recipes- soups, breads, desserts. They've all turned out surprisingly very well! 


This week I've got training in Nashville and am having to drive 45 minutes in the morning and 45 minutes home in the evening. I'm actually enjoying the drive as it has given me time to unwind and sing to my heart's content.

Of course, I'm still enjoying Pinterest. It has been where I have found many of the different recipes I've tried. It also is so neat to see how many creative things people can come up. I'm inspired every time I visit! 

I'm loving this time with my husband. M and I have really had fun together recently- even if it's just something as simple cooking dinner together or watching shows we like as we unwind in the evening. It is so important to a marriage to still do the "simple" things together.

I'm loving Chris Medina's song about his fiance- "What Are Words". Warning: It's a tear jerker. Not only has this song inspired me to be more true to the words I vowed to my husband, but also be more aware of the words I say to others. I am going to be more committed to doing what I say I'm going to do- whether it's pray for someone, actually call them after a "we haven't talked in so long, let's catch up- I'll call you!", or just follow through with something I've said I will do. "What are words if you really don't mean them when you say them?"

I'm LOVING my bohemian dress from Rue 21. It is the most comfortable dress I've ever owned. The top is stretchy tube-top-like, and it is long and flowy straight down to my toes. The pattern is great and it look so cute with a sweater and a belt. It's like the picture below, except with bright orange and teal patterns. I didn't think it was me, but once it was on- I fell in love!

I'm loving being able to make plans spontaneously. M and I are going to visit our good friend Jeremiah (one of M's groomsmen) in Alabama this weekend- and it was planned literally yesterday. It feels good to finally have a little extra money to do things that we enjoy.

It has certainly been awhile since I've blogged. It's been a mixture of being so stinkin' busy at work and just not really feeling like writing about anything. Glad I haven't lost any readers! 

This past week at work I worked over almost every day, and I still don't feel caught up. I have truly grown to love my job and don't feel like "the new girl" as much anymore. I've even got a full caseload now. As a case manager, I've constantly got something that needs to be done for somebody. It definitely requires organization and staying on top of things. I'm proud to say I have yet to procrastinate! The next week or so, I will be driving back and forth to Nashville everyday for training for work. As much as I am not looking forward to driving the fifty-some miles twice a day, it will be nice to just relax and listen instead of driving around what feels like the entire world! 

After a crazy workday on Friday, I was ready for this weekend! Last night we went to the movies and saw Courageous. It was an excellent movie. Even though it was geared towards fathers, it definitely inspired me to want to be a godly, right kind of mother when that day comes. Hopefully the movie spoke to M as well. Also, at one point there was a clear presentation of the gospel. Praise the Lord!


This morning we slept late and it felt SO good. We eventually got up, worked outside for a bit, then hopped in the truck and headed for lunch downtown and a festival a town away. 


We had lunch at House Blend, a coffee shop and cafe in downtown Dickson. They have the best coffee and the cutest gift shop. I love going in there in between visits during the week. We had lunch there today and it was delicious, as well. 
  
After lunch, we drove toward a small town called White Bluff, where the people who we rent our house from were selling homemade Jambalaya. There were also various vendors lining the main street and a band playing. We walked around a bit, people-watched a bit, and had some of the BEST Jambalaya we've ever had.


M all the sudden got the gumption after we got home to FINALLY help me put our headboard together. We've had the wood for literally 3 months or more. We put it together, stapled the batting to it, and I plan to staple the fabric to it next week. I'll be sure to post pics of the final outcome!
